Initiative: Land Lab

The vision of Bistro Box began with the powerful and simple observation that restaurants are gateways to neighborhoods. The vision’s evolution asks what can be done to strengthen that idea many times over? Recognizing the power of food and the experience of dining within our region, the purpose of Bistro Box STL is to advance regional culinary entrepreneurship and the sustainable growth of the food economy through programming and services. This exciting and iconic destination will be housed within an new building constructed principally from cast-off shipping containers.
Progress
The Bistro Box team has just completed a redesign of their initial proposal that will better support their restaurant model. The team is now solidifying their business model, and developing a timeline for implementation of the project.
